Description

The project aims to find measures which companies can implement to effectively encourage and trigger climate-friendly and healthy food choices of customers. This goes beyond purchasing decisions and includes other food-related decisions and activities, such as storage and meal preparation at home. Taking a customer perspective, the project examines the entire lifecycle of foodstuffs from the acquisition of information about food products to the disposal of allegedly spoiled foodstuffs – both in terms of their sustainability impacts and opportunities for companies to influence customer behaviour towards more sustainable eating habits. The project is realized by the Centre for Sustainability Management (CSM) at Leuphana University Lüneburg in cooperation with the Nordakademie, Hochschule der Wirtschaft, and a company from the food processing industry.
